I've rarely eaten cassoulet, which is odd living in the Southwest. It is definitely not served in restaurants or on tables in Aveyron, although it is in Albi. When I went to Les Halles in Narbonne, I bought a nice high-quality tin of cassoulet from the only artisanal producer left in Castelnaudary; his business keeps a stand open in that market in Narbonne 6 days a week. He gave me careful instructions about how to heat it in the oven, and I'm looking forward to trying it on a cold day this winter.
