For a while, Mike worked near a game butcher down in Kent. Pigeons! Duck! Grouse! Venison! and of course rabbit and its bigger cousin, the hare. I do like a Lapin Moutarde but I do want the little beasty tidy and ready to go in the pot too. Got me thinking I may head to our local butcher and see what he's got for game eating.

Also, I would strongly suggest a combo of mustards - grainy & dijon. Makes a difference.
